Ingredients:

- 2 cups mixed vegetables (potatoes, peas, carrots, cauliflower), boiled and mashed

- 2 medium onions, finely chopped

- 2 medium tomatoes, finely chopped

- 1 capsicum (bell pepper), finely chopped

- 4-5 cloves of garlic, minced

- 1-inch piece of ginger, minced

- 2-3 green chilies, finely chopped

- 1 teaspoon cumin seeds

- 1 teaspoon red chili powder

- 1 teaspoon pav bhaji masala

- 1/2 teaspoon turmeric powder

- Salt to taste

- Butter for cooking

- Chopped coriander leaves for garnishing

- Pav (soft buns) for serving


Instructions:

1. Heat butter in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until they turn golden brown.

2. Add minced garlic, ginger, and green chilies. Sauté for a minute.

3. Add chopped tomatoes and cook until they turn soft and mushy.

4. Add red chili powder, pav bhaji masala, turmeric powder, and salt. Mix well and cook for a couple of minutes.

5. Add chopped capsicum and cook until it becomes slightly tender.

6. Add the mashed vegetables and mix everything together. If the mixture is too dry, you can add a little water.

7. Mash the mixture using a potato masher, ensuring the vegetables are well combined.

8. Cook the mixture for another 5-10 minutes on low heat, stirring occasionally.

9. Adjust the seasoning as per your taste.

10. Garnish with chopped coriander leaves.

11. For the pav, slit them horizontally without cutting them into two separate pieces. Spread butter on the inside and lightly toast on a griddle until they turn golden brown.


Your pav bhaji is ready to be served! Serve it hot with the toasted pav buns, some chopped onions, and a slice of lemon on the side. Enjoy!
