 Certainly, here's a basic recipe for making upma:



Ingredients:

- 1 cup semolina (rava or sooji)

- 1 small onion, finely chopped

- 1/4 cup mixed vegetables (carrots, peas, beans), finely chopped

- 1-2 green chilies, finely chopped

- 1 teaspoon mustard seeds

- 1 teaspoon urad dal (split black gram)

- 1 teaspoon chana dal (split chickpeas)

- A pinch of asafoetida (hing)

- A few curry leaves

- 2 tablespoons oil or ghee

- Salt to taste

- Chopped coriander leaves for garnishing

- Lemon juice (optional)


Instructions:

1. Heat oil or ghee in a pan. Add mustard seeds and let them splutter.

2. Add urad dal and chana dal. Sauté until they turn golden brown.

3. Add asafoetida, curry leaves, chopped green chilies, and finely chopped onions. Sauté until the onions become translucent.

4. Add the mixed vegetables and cook them for a few minutes until they start to soften.

5. Add semolina (rava) to the pan. Roast it on low to medium heat, stirring constantly, until it turns light golden and gives off a nutty aroma. This takes about 5-7 minutes.

6. Add 2 cups of water and salt to the pan. Mix well to avoid lumps.

7. Cover the pan and let the upma cook on low heat for about 5-7 minutes, or until the water is absorbed and the upma is cooked.

8. If you prefer, you can squeeze in a bit of lemon juice at this stage for a tangy flavor.

9. Garnish with chopped coriander leaves.


Your upma is ready to be served! It makes a delicious and comforting breakfast or snack. Enjoy it hot with chutney, pickle, or yogurt.
